First, clean your shrimp and vegetables and cut them in small pieces.
Then, in a blender add half of you onion, one sweet aji, ginger, celery, jalapeño, tomato, cilantro, one lime, salt and 3/4 of a cup of water. Blend all this ingredients until you get a paste consistency.
In a bowl, add the shrimp, lime juice and salt. Then, add small strips of onion, small pieces of sweet aji, and tomato to the shrimp and mix.
When the blend paste is ready incorporate them to the shrimp and mix and let it sit for a while so the shrimp can be cooked.
Last but not least, serve the shrimp ceviche and top it with more onion, sweet aji, tomato and enjoy!
