Slice the zucchinis lengthwise into thin strips. You can use a mandoline slicer or a sharp knife.
In a mixing bowl, combine the shredded chicken, onion, crema agria, pinch of salt, parsley and mix all together.
Lay out a zucchini strip on a clean surface and spoon a small amount of the chicken mixture onto one end of the strip. Roll it up, securing the filling inside. Repeat this process with all the zucchini strips.
Add olive oil to a skillet in medium heat and place the zucchini rolls to cook for 5 minutes.
While the rolls are cooking add the tomatoes , oregano, salt, pepper, olive oil and garlic.
Add the yellow cheese on top of each zucchini roll until it melts.
Place in a bowl the zucchini rolls and cherry tomatoes. Garnish with oregano, parsley and more olive oil on top. Enjoy!
