If you’re looking for a delicious and healthy way to prepare fish, then cooking it inside banana leaves is a fantastic option. This traditional cooking method, commonly used in many cultures around the world, infuses the fish with a unique flavor while keeping it moist and tender. In this recipe, we’ll be using fresh, whole fish that is seasoned with a fragrant blend of herbs and spices, then wrapped in banana leaves and grilled or baked to perfection but in this case we are going to try to cook it in the air fryer. This dish is not only impressive to look at but also packed with flavor and nutrition, making it the perfect centerpiece for any dinner party or special occasion.
Rinse the fish fillets under cold running water and pat them dry with a paper towel.
Place the banana leaves on a flat surface and brush them with olive oil. Put a fish fillet in the center of each banana leaf and season the fillets with salt, garlic powder, and lime juice and set aside. Top the fish fillets with red bell pepper, jalapeño, cilantro and lime.
Fold the banana leaves over the fish fillets, forming a packet and place the packets in the air fryer and bake them for 10-12 minutes, or until the fish is cooked through.
While the fish is cooking prepare you guacamole. Cut the avocados in half lengthwise, remove the pit, and scoop out the flesh with a spoon. Mash the avocado in a bowl with a fork until it reaches your desired consistency.
Add the onions, jalapeño, cilantro to the bowl. Squeeze the lime juice over the mixture and sprinkle with salt. Mix all the ingredients together until well combined.
Remove the baking sheet from the air fryer and carefully open the packets. Be careful of the steam that will be released.
