Start by preparing the eggplants. Slice them into 1/4-inch thick rounds, add salt and pat the eggplant slices dry with a paper towel to remove the excess moisture.
Cover the eggplant with flour and remove any excess they might have and cook in the air fryer for ten minutes.
In a pre heat-pan add olive oil and combine, tomato paste, garlic, pepper, oregano and mix.
Add fresh basil and continue cooking.
In a cooking bowl pread a thin layer of marinara sauce on the bottom. Place a layer of fried eggplant slices on top, slightly overlapping them.
Sprinkle a generous amount of grated Parmesan cheese and shredded mozzarella cheese over the eggplant layer, add fresh basil in the middle of the layers. Repeat the layering process until all the eggplant slices are used, ending with a layer of cheese on top.
Cook for 10 minutes in the air fryer until the cheese is melted and all the ingredients are combines.
