Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
In a small bowl, whisk together the egg yolks, Pecorino Romano cheese, and pepper.
In a separate pan, sauté the pancetta or bacon over medium heat until crispy.
Once the spaghetti is cooked, reserve 1 cup of the pasta water and drain the rest.
Add the spaghetti to the pan with the pancetta or bacon and remove from heat.
Add the egg yolk mixture to the pan and toss quickly to coat the spaghetti. If the mixture is too thick, add a little of the reserved pasta water to loosen it.
Garnish with parsley or basil, if desired. Serve immediately and enjoy your homemade Pasta Carbonara!
